wholesome cheesy broccoli bites

These tasty little gems are perfect as an appetizer for you or dinner for the kids, and a great alternative to chicken nuggets if you're going meat free. Here is the backstory: my little Frances is 13 months old and completely perplexing me in the food department. Whereas my boys would eat anything I diced up for them - fruits, vegetables, dairy, meat, eggs, grains - Frances will eat toast and strawberries. Since she is practically perfect in every other way, I can't fault her for this one thing, but I mean, ain't nobody gonna thrive on toast and berries. So I was hopping around the internet and found a similar recipe here. I changed it up just a bit, and now we have a delightful little bite the whole family will eat. And with only four ingredients, this will be a regular around here.

Cheesy Broccoli Bites
makes 2 dozen

1 1/2 cups chopped fresh broccoli
1 1/2 cups crushed round crackers
1 1/2 cups shredded cheese
2 eggs

Pulse your broccoli in a food processor until it's tiny, but not a puree. Do the same with the crackers - you want them to be pretty much powdered. Combine all four ingredients until it all comes together. It'll be sticky and messy, but all good food is. Form into rounds about the size of a golf ball and flatten slightly. Put them on a cookie sheet lined with parchment or sprayed with cooking spray and bake for 10 minutes at 350. Flip them and bake another 10 minutes. Let cool slightly and serve warm.

A couple of notes on ingredients: 

I used mini 12 grain crackers from Trader Joe's. They're delicious and nutritious. You're basically looking for something resembling a ritz - you decide which works best for you. 

I used jack cheese and it was really good, but next time I'm going for sharp cheddar for an even cheesier flavor.

Add in a little salt if this is for adults, but it doesn't need it for the babies and toddlers.
