{recipe} peanut butter berry pancakes

This recipe is ridiculous. Like, devoured in seconds, everyone's gonna love it,
crazy good ridiculous. 
I mean, unless you don't like peanut butter, which is a foreign concept around here.
One of my kids told me these were the best pancakes he's had in his whole life,
which I think is saying something because he's kind of a pancake connoisseur.
Another kid doesn't even like pancakes (weirdo) and he was the first one done.
What I'm saying is, make them.
Your family will thank you.

Peanut Butter Berry Pancakes
makes 10
1 cup all purpose flour
2 tablespoons +1 teaspoon sugar
1 tablespoon baking powder
2 cups fresh or frozen mixed berries 
1/4 cup creamy peanut butter
2 tablespoons butter + more for the skillet
1 egg
1 cup milk
powdered sugar for dusting (optional)
whipped cream for topping (optional)

Mix flour, 2 tablespoons of sugar and baking powder. Stir in 1 cup of frozen berries until coated.
In another bowl, melt butter and peanut butter in the microwave for about 25-30 seconds.
Let cool for a minute or two, then stir in the egg and milk.
Combine with the flour mixture without over mixing. 
In a separate bowl, combine remaining berries with one teaspoon of sugar, mix well and set aside.

Heat a skillet or griddle to medium heat and coat with butter or cooking spray. 
(Just go with the butter.) 
Drop batter by 1/4 cups full. The mixture is thick, but the outcome is perfection. 
Once your pancakes are done, stack them up, dust with a little powdered sugar, whipped cream and mixed berries... 
no syrup necessary!

If you have a peanut allergy, you could easily substitute almond butter. I bet it'd be delish.
This is a fun way to switch up a weekend treat to something a little extra special.
