{recipe} crazy good flatbread

One of my favorite things to make any day of the week is homemade pizza.
It takes practically no time at all, it's cheaper and tastier than take out, 
and the possibilities are endless.
I buy my dough at Trader Joe's because it's cheap, easy and delish,
but this recipe is really good if you want to make your own.
The other night I whipped up a cheese pizza for the kids, and this little delight for
Nick and me:

This was one of those use-whatever's-in-the-fridge kind of nights, but ended up being so good, we're definitely having it again. It's an easy main dish, or a great appetizer!

Here's what you need:
1 batch of pizza dough
olive oil
10ish stalks of asparagus
1/2 yellow bell pepper, thinly sliced
4-5 slices thick cut salami, diced
1/2 cup shredded mozzarella
1/2 cup crumbled goat cheese

Roll out, your pizza dough to flatten it, then press it out onto a lightly oiled cookie sheet. 
The thinner, the better.
In a super hot skillet, toss asparagus and peppers with a little olive oil and salt and char.
They should still be al dente, but a little blackened to bring out the most flavor.
Drizzle a tablespoon or two of olive oil on your crust and spread evenly. Sprinkle lightly with salt (you don't need very much). 
Evenly distribute salami and sprinkle with mozzarella.
Add on roasted vegetables.
Bake flatbread for about 15-20 minutes at 425 until crust is kind of golden and a little crisp on the edges.
Sprinkle with goat cheese and enjoy!

  6. YUM! we do lots of homemade 'fancy' pizza too, but its easy to get stuck in a rut sometimes. definitely pinning this and trying it with asparagus next time!
