The other night I was craving something sweet but not overly decadent. We literally had one scoop of ice cream left in the carton, and an idea dawned on me.
And I am so glad it did, because oh. my. heck. It was good.
Here's what you need:
6 ounces ruby red grapefruit juice (orange juice would also work)
1/2 cup vanilla ice cream or frozen yogurt
sparkling water
Add your ingredients to a large mug, adding sparkling water last. Stir it up so that it's nice and creamy and well mixed.
Drink it.
I mean, easy, right?
And seriously so good. And guess what? Only 213 calories with full fat regular ice cream. So go forth and make yourself a creamsicle soda and don't feel even a little bit bad about it.

Pinning this and will be making it! I've been craving grapefruit juice and live in a perpetual state of craving ice cream. ;) You could also make this into a punch in a big ol' punch bowl for a special occasion!
