Curried chicken salad is one of our favorites around here.
Even the kids like it, which is big time.
I make it often, but this time decided to change things up a bit and make it the full meal deal
by increasing the amount of dressing and tossing with cold rigatoni.

It. was. delicious. and will definitely be a regular event at our table.
roast and shred your chicken. stick it in the fridge to cool.
cook pasta according to package directions, rinse with cold water and set aside.
make your dressing and set aside. (sorry, no photos.)
combine green onions, cranberries, almonds and celery.
mix with chicken and dressing until well combined.
toss with pasta, season with salt and pepper and garnish with cilantro.
(sometimes I make 1 1/2 times the dressing in case it needs a little something extra.)

Curried Chicken Pasta Salad
(if you're not big on curry, leave it out)
1/2 cup light mayo
1/2 cup plain, non fat yogurt
1 tablespoon curry powder
1 tablespoon apple cider vinegar
1tablespoon honey
3 chicken breasts, roasted and shredded
6 green onions, sliced
1/2 cup chopped celery
1/2 cup dried cranberries
1/3 cup sliced almonds (optional)
1 pound pasta of your choice
salt and pepper to taste
1/4 cup chopped cilantro (optional)
Cook pasta according to package directions.
Rinse with cold water and set aside.
Combine mayo, yogurt, curry, vinegar and honey.
