sneaky healthy creamy tomato basil soup

I love creamy tomato basil bisque. But most of those delicious recipes prepared in cafes
the world over have nearly 40 grams of fat per serving
Probably because they call for a stick of butter and three cups of cream.
I mean, no wonder it tastes amazing.

Well, I have a seriously delicious easy recipe that is also super good for you.
It comes out at about 190 calories per serving and 8 grams of fat. 
Pretty good makeover, if you ask me.

All you need: zucchini, baby carrots, tomato basil marinara, broth or water (not pictured) and milk.
Zucchini is awesome because it's buttery and totally undetectable, and filled with healthy goodness.

simmer your vegetables in 2-4 cups of broth or salted water

add your jar of marinara and the vegetables to your blender and puree

put everything back into the pot and add in milk. simmer on low until heated through.
like long enough to make some gooey grilled cheese.
(or a salad.)

Can you handle how easy that is?
And so dang good.

healthy low fat sneaky good creamy tomato basil soup
(yes, it needs that many adjectives)
serves 4
2 small zucchini, chopped
1.5 cups baby carrots
1 jar tomato basil marinara
1.5 cups milk
2-4 cups broth or water
(if you use water, add a pinch or two of salt)

Simmer zucchini and carrots in broth until al dente, about 8 minutes.
Combine vegetables and marinara in a blender and puree.
Pour mixture back into pot, add milk and simmer over low heat for 15 minutes, until heated through.
Serve and enjoy!

My boys love dunking grilled cheese, but this would also be great over pasta with a little parmesan, if your kids aren't really into soup.
