easy, healthy meals on a budget? we got your back. (and a recipe.)

A few weeks ago, my friend Danielle tweeted that she wanted someone to make a meal plan 
and shopping list for her for the week for under $120.
She was half kidding, but being the nerd that I am, I told her I'd do it.
I like a challenge. Especially when it involves food.
It was kind of awesome because I realized how easy it was and how much of a stress reliever it is to know what we were going to eat all week instead of staring blankly into open cupboards, wondering what I can mix up for dinner.
By that afternoon five other tweeps wanted in on the plan.
And then Sarah had a fantastic idea:
what if we all got in on the action?
So that's what we're doing! Next Friday we are going to host a little link up party.
Your assignment, if you want it, is to make up a meal plan for a week, a shopping list and links to the recipes.

All posts will show up on both blogs, reaching nearly 650 readers!
We could have meal plans for ages, 
and we're hoping this will be a blessing to all of you busy ladies.

In the mean time, I want to share with you one of my go to recipes.
Seriously, this chili is SO good and super easy to make.
Plus, it's diet friendly, without seeming that way, so everyone is happy.

Chicken Corn Chili
3-4 chicken breasts
24 oz. salsa (fresh or jarred)
2 cloves minced garlic
1 tablespoon chili powder
2 heaping teaspoons cumin
2 cans black beans, rinsed
2 cans kidney beans, rinsed
10 oz. bag frozen corn

Put chicken (bonus: they can still be frozen), salsa, garlic and spices in the crock pot. 
Cook on low for 4-6 hours. Remove chicken and shred. 
Add remaining ingredients, give it a quick stir, and cook for another 2-3 hours on low. 
We like to add a little plain yogurt or sour cream and sprinkle a some cheese and avocado on top. 
Serve it with cornbread and salad for an easy, healthy dinner.

This is also a great freezer meal. We use leftovers for nachos or burritos later in the week.

  2. this is very timely! i was JUST talking about trying to pull together a bunch of recipes and meal plans...preferable cheap, easy, and crock-pot-ish. though i will probably not contribute to the big meal plan swap (you know, i hate cooking and nobody would benefit from anything that i actually do cook) i will definitely show up to reap the benefits of what others post! :) and tonight we will be eating chicken chili.

    1. rach, i can email you the plan i put together last month that includes TWO crock pot meals :) seriously, easy peasy. okay, well one of them is this chili, so that's covered. anyway, i think you could put together a meal plan, 'cause you're crafty like that. and hello? pinterest.

  3. That looks delicious! And a meal plan swap is a totally brilliant idea. I do meal plans every week, and since I don't love to cook, I don't know that anyone would really want to copy mine, but I'm sure others' ideas will inspire me!

  4. great idea! i do a monthly menu for our family but i only use it as a guideline, especially these days... like if i'm craving something ill make that, if not ill check the menu and do that. it helps with food shopping, mental health, time management, etc. i've been meaning to start posting them... but this is fantastic! looking forward to it!
