I am kind of in shock right now.
A couple of months ago I got an email from Biscoff (you know those tasty little cookies you get on airplanes? i know you can actually buy them, but that was my only association.), asking me to participate in a back to school recipe contest.
It sounded right up my alley, so I agreed.
And then I forgot about it.
And then they emailed me again.
So on the very last day of the contest, Lute and I whipped up a batch of granola bars using Biscoff spread, made a video, and sent it in two hours before the deadline.
I am good at nothing if not procrastination.
I woke up this morning (the day they choose the winners) thinking and praying, I hope we win at least last place because in all of my inexperienced parenting I told my 4 year old it was a contest and I don't want him to feel like a loser.
Well, guess what? We won the grand prize.
HELLO, unexpected.
I completely credit Lute's cuteness and charming personality.
Here is our winning video. Please excuse my awkward on camera presence.
And really, make these granola bars!
Biscoff Granola Bars
1 cup crisp rice cereal
1 cup rolled oats
1/2 cup almond meal (or sliced almonds)
1/2 cup flaxseed
1/2 cup Biscoff spread
1 teaspoon vanilla
1/4 teaspoon salt
14 ounces sweetened condensed milk
Mix together the cereal, oats, almonds, flaxseed, Biscoff, vanilla and salt. Pour in condensed milk and mix well.
Line a 9x13 pan with foil and coat with cooking spray. Spread mix evenly into the pan and bake at 325 for 25 minutes, until golden brown. Allow to cool fully before cutting into bars. Enjoy!
Oh my gosh!!! Lute is just about the cutest thing ever! Also, you looked great. Jude and I just watched the video and he wants to make the granola bars now. Way to go, guys!
